Tropical Stuffed Shells

This unusual (yeah, we thought so too!), combination makes a great light, flavorful, filling meal!

 

What you will need:

1 tbsp fresh chives, minced

1 medium riped mango, pealed, seeded, and chopped

6 jumbo pasta shells

1/4 cup sour cream

2 tbsp lime juice

1 tsp Dijon mustard

2 boneless, skinless chicken breasts

1/2 cantaloupe seeded, chopped

**NOTE – There is a box of cilantro lime rice pictured.  We opted to not make that because the shells are THAT filling!!

 

Step One: Prepare jumbo shells per direction on the box.  Drain, rinse, set aside.

 

 

Step Two: Mince chives and mix with desired seasonings (We used sea salt, crushed pepper, and garlic), chop fruits, set aside.

 

 

Step Three: Apply desired amount of chives/seasoning mixture to uncooked chicken breasts

 

Step Four: Once your chicken is done, combine all ingredients into one bowl, including some of the minced chives.

 

Step Five: Stuff your shells full, garnish with left over chives, and enjoy!

 

Now, we know this combination sounds a bit…well…disgusting!  But take it from us, somehow – it works.  You don’t really get a fruity taste…it’s very fresh and flavorful.  The lime juice really brings it all together — I added about 1/2 a tbsp extra of lime juice, and an extra spoonful of sour cream to get the desired flavor.  Play around with it and have fun!  But believe us when we say, it taste A-M-A-Z-I-N-G!!

Almond Crusted Parmesan Chicken With Pasta

 

 

This is a classic favorite among many, but with a few twists, it’s a simple, healthy, QUICK dinner for your family!

 

What you will need:

 

Boneless, skinless, chicken breasts (The amount will depend on how many people you are feeding!)

Shredded Parmesan Cheese, sliced almonds (i suggest the Almond Accents plain baked!), a light olive oil

Wheat thins Parmesan Basil flavored crackers (These are HORRIBLE alone, but are AMAZING in this mix!)

We also used half a box of whole wheat spaghetti, a few cups of a basil tomato sauce, garlic, salt and pepper.  As always, feel free to add your favorite spices!

**NOTE** We do not have a stove, so this entire meal was made using a toaster oven, and a table top burner

 

The Chicken

Step One: If you are using frozen chicken, start defrosting it.  If it’s fresh, ignore this step!

Step Two: On a paper plate, crunch up two hand fulls (for 2 chicken breasts) of the Wheat Thin crackers.  Mix in your spices once it has been fully crushed!

 

Step Three: In a gallon sized plastic bag, break apart ten crackers, mix them with almonds and shreaded parmesan cheese.  Feel free to aded in more spices!

*After steps two and three are complete, combine the two mixes into the bag.

 

Step Four: This is where we go all shake-n-bake on ya!  Put your chicken into the zip lock bag, MAKE SURE IT IS TIGHTLY SEALED, and start coating your chicken.  Once you have them good and covered, place into a glass cooking pan.  Poor on any excess mix on the chicken in the pan, and sprinkle with more cheese!

*We set our toaster oven to 450 degrees and let it cook about twenty minutes until they were golden brown

 

And the Pasta!

Step One: When using whole wheat pasta, I suggest NOT boiling your water first.  Let the pasta sit in the water while it heats up.  It should never really reach a rappid boil.  It will steam a little though!  Take a test piece, and once the pasta is at your perfered consistancy, it’s done!

 

Once your chicken and pasta are done, put them together on a plate and enjoy!

Turkey Burgers N’ Rings

  Weather your looking for a healthy alternative to the all American burger…or you are just absolutely SICK of chicken, this is for you!

Here are the main ingredients you will need:  
 
  
Vegtable Oil
Good Cheese (We Used Provolone)
 Two Red Onions
 Ground Turkey
 Onion Ring Batter (or you can make your own!)
 Rolls or Buns
 Saltine Crackers or any crackers (optional)
 Fresh Garlic
 Lawry’s Season Salt
 Sea Salt
 Black Pepper
 Italian Seasonings (or your favorite seasonings)

Step One: Dice one of your red onions.     
 
 
 
Step Two: Mix onions and spices together with ground turkey. 
 
 
Then form into patties!
 
Step Three: Place the turkey patty onto the grill (or in our case, the George Foreman).

 
 
Step Four: Cut bun and dress burger after thoroughly cooking the burgers to your liking.
 

Now on to the Onion Rings!

 
Start off by getting your fryer ready by adding the required amount of vegetable oil, then heat it up!  
 
Step One: Slice your other red onion into rings
 
 
Step Two: Mix the batter according to the directions on the box, or your own personal recipe.  We added in broken up pieces of saltine crackers to add flavor and texture!  Now, dip the rings into the batter.
 
 
 
Step Three: Carefully drop into the fryer.
 
 
 
Step Four: Let the rings get a nice golden color, then carefully remove them.
 
 
 
**HINT** Place finished rings on paper plates and paper towels to absorb excess grease.
 
 
 
Repete steps until all your rings are done!
